Les Macarons Dalloyau

Posted by Kero at Thursday, November 04, 2010
Festival Colbert also marked the opening of another Paris-based food company in The Dubai Mall. Dalloyau, whose history goes back to 1682, popularized the opera cake which I will be sharing later on. For now, have a look at their French patiserrie's  macaroons.

Hubby's all time-favorite dessert creation is Tiramisu. I never heard him praise any other cake or pastry. But when he got to taste the Dalloyau macaroons, he was very impressed. They look very pretty and delicate, taste soft, lovely, and chewy. Reading further on their menu, they declared that all their macaroon recipes are short on sugar. That explains why Hubby indulged himself to more servings.

They offer around 10 flavors. The dark pink is called Fig - subtle blend between akmond and the cream, sprinkled with fig seeds. The lighter pink is called Rose - a delicate rose-perfumed cream in a vanilla setting.

We opted to try three flavors: Chocolate - a rich chocolate ganache 70% Venezuelan cocoa; Coffee - a light cream with the deep, rich flavor of Italian coffee; and Salted Butter Caramel - the house special caramel that is short on sugar with topsalt.

The box above contains 15 French macaroons. It costs146AED. The smallest box which offers 10 macaroons is sold for 110AED.

Here is one sample creation from their famous opera cakes.

The Opera Cake was invented in 1955 by the grandfather of the current co-presidents of Dalloyau. In every bite, all flavors can be tasted: the power of coffee, intense chocolate and sweet almond. So that's the reason why I exclaimed my one tiny slice of opera cake for dessert in Kaleidoscope is heavenly and sinful to eat!

When she first tasted this dessert, the chef's ballet-loving wife declared: "This gateu reminds me of the stage at the Opera."

Dallayou is located at the 3rd level of Galleries Lafayette.
