I made this over the week for my muffin-crazy toddler =). Home-baked muffins are hard to resist and this combination of chocolate and banana will really test your will power. The easy recipe follows.
Choconana Muffins
Ingredients
225 g plain flour
25 g cocoa powder (sometimes i used Nesquik)
1 tsp baking powder
1/2 tsp bicarbonate of soda
100 g caster sugar
3 ripe bananas
2 large eggs beaten
4 tbsp sunflower oil
1/2 cup chocolate buttons
Here's How
1. Preheat oven to 200 degrees C. Grease 12 hole muffin tin.
2. Sift the dry ingredients together in a large bowl.
3. Mash the bananas on a plate. Then beat eggs together with the oil.
4. Add mashed bananas and the egg and oil mixture to the dry ingredients and beat together lightly.
5. Divide the mixture between muffin cases. Decorate with chocolate buttons.
6. Bake for 20-25 minutes until risen and firm to touch. Serve warm.
